Dilly's Blend

Story

This blend started as both sides of the island: Haiti Savanne Zombie and a Dominican Republic honey-process from Ramirez. Haiti brings those classic crowd-pleasing chocolate notes. Ramirez added citric, floral, soft fruit, and an oak-and-peat finish.

Ramirez got harder to get. The sweetness I was chasing lives in honey process, so that side now comes from Finca La Laja, a family estate in Veracruz. Honey process takes the skin off the cherry and leaves the sugary pulp on through fermentation.

Flavor

Rich chocolate, a little earth, mild orange citrus, and a smooth, creamy body. The Caribbean is in this cup. It took three years of roasting to get it here.
