Haiti coffee, roasted this week in Livermore

I've got a Haitian coffee in the hopper. Savanne Zombie. Washed. Low acid, sweet chocolate, a little floral. Thirty dollars. It's also the Haiti side of Dilly's Blend.
Haitian specialty is not something you trip over at the store. Haiti used to ship a lot of coffee. It doesn't now. I roast this one to order, in a kitchen in Livermore.
Coffee wants some shade. Plenty of origins cut that canopy to pack in sun trees. Haiti is a harsher version of the same problem. Most households still cook with charcoal, so a tree is also fuel. When a coffee grove keeps its shade, that is not a lifestyle sticker. That is trees that stayed standing over the coffee. The magazine number for how much forest is left depends on what you count. The direction is the same: shade over coffee is hard to hold.
Washed means the skin and fruit come off, the sticky stuff gets rinsed, and the beans dry in the sun. That's why this cup is chocolate and a little floral, not jammy. If you've seen "Blue Mountain" next to a Haitian lot, that's a Typica selection planted there. It is not Jamaican Blue Mountain.
I'm not going to narrate a farm I haven't walked. Public sources don't even agree on which department this lot comes from. What I can tell you is the cup, and that I roast last harvest's green this week. Haiti's pick is February through April. Late August is off-crop. This bag is that crop, roasted now.

This week in the calendar
Peru is at the tail of harvest. Haiti and Mexico are off-crop. Livermore is still hot, which is your honest weather report, not a seasonal menu. This Haiti is chocolate and low-acid, so it drinks well as French press or cold brew until the evenings actually cool off. What I’m roasting this week is not what’s being picked this week. That’s normal. That’s how green coffee works.
