Story:
This Blend features a Caribbean based influence of flavors. The original blend had the two sides of the island, Haiti and Dominican Republic. Haiti Savanne Zombie brings classic crowd-pleasing flavors you might find in Columbian Single origins but refined in the excellence of the Blue Mountain variety of coffee grown in the small village of Zombie. Dominican Republic's Ramirez plantation features a Red Honey process coffee with citric, floral, soft fruit flavors, with an almost oak/peat like finish, sweet & complex.
Variations:
The availability of Dominican Republic's Ramirez plantation has become less predictable but the flavor profile I am after comes from the Honey Process which I found available from Mexico's Finca La Laja farm co-op. Honey process removes the skin of the cherry, but the sugary pulp remains through fermentation to add a sweet flavor.
Blue means: Active Red means: Deactivated
Mexico: La Laja: Mild orange citric acidity and a smooth, creamy body.
Dominican Republic: Ramirez: Citric, floral, soft fruit with an almost oak/peat like finish, sweet & complex
Flavor Profile:
Rich chocolate notes and a subtle touch of earthiness rounded out by a mild orange citric acidity and a smooth, creamy body. The taste of the Caribbean lives in the Blend that took 3 years of experimenting to finalize.
